I'll be the first to admit my lameness. I've been too busy to blog. Or uninspired to sit and write. Or a billion other excuses. But you know, all that matters is that I am here, now, telling you about my culinary experiments, and how frugally I managed to accomplish them.
So, fair readers, Wednesday I contributed an apple. It cost me $1. Now I'll make up for my meager contribution big time Friday, but I'll get there. Let's talk about Thursday first.
Thursday Pamela was going to bring her soup, and I wanted to compliment the soup with something simple to make. I had previously made pesto with the basil I got at the farmers market. I added olive oil, garlic, pine nuts, and cheese. I'll estimate the cost about $4 (The only thing purchased this week was basil for $2). I topped some bread, $1's worth, with that and about $4 worth of cheese. It was the same fancy cheese from Renata's the other night. It was on that salad, and I kind of fell in love.

After work I went home to cook for Friday. I've made the famous squash squares. Which I don't know why they are called squash squares, as it is more of a squash souffle (although not exactly souffle by definition). But it is pretty amazing. I spent $4 on the squash, and $1 on creamer. I had everything else. We can count an extra $1.

I also roasted some chicken thighs with some potatoes, brussel sprouts, onions, garlic, and olive oil. The two thighs for lunch tomorrow were $2. I had everything else already, and will estimate an extra $3.

I had a portion for dinner. And yum. And cheap. My chicken was $1.50, and as the souffle makes 6 servings, I'll call it $1.
Dinner for $2.50 Not too shabby. I'm a little proud of myself.
Now I just wish someone else would do the dishes...
