Invigorated by our lunch adventure, I left my apartment last night around 9pm in search of mushrooms, having forgotten that Stiles didn't have them when I'd gone over the weekend. For the sake of not missing my bedtime, I got a package of pre-sliced baby portobellos (there's another name for these...) at Food Emporium for $3. FE isn't my first choice, but the one in my neighborhood is pretty fancy, and tends to have the random canned/jarred goods that smaller markets don't.
So, returning from my market run (to which my roommate exclaimed, "you're cooking NOW?") I sauteed those mushrooms in some olive oil and butter, added a shallot, one clove of garlic, a tsp or so of dried rosemary, and a jar of marinated artichoke hearts ($1.69) and then deglazed the whole situation with some chicken stock. (75 cents-ish)
The last step was mostly due to the fact that my pasta water wasn't even boiling yet, but I'm glad it happened, because that made it extra-delicious. Half a box of linguine later ($.75) and voila!
Plus a dollar's worth of freshly grated parmeggiano (see cloud-like substance in photo above) because nothing's too good for Eva, esp since she showered me with pine nuts.
For those keeping score, that brings today's main course to a total of $7.19 for two servings. (Two and a half, really. I saved some of mine.) I'm not even going to factor in the cost of shallots and garlic, because Stiles kind of gives them away.
And Eva's salad was kind of amazing. Enjoy.
