Salad is not in a puddle at my feet

Pamela had told me it was on! Pamela is always serious. With a lot of people you make plans, and you get excited, but your partner in crime doesn’t step up in the end, and all your dreams are left shattered in a puddle at your feet.

What I mean to say is that P and I casually threw around the idea of having pot luck picnics at work on our lunch hour. We have gotten in the habit of seeking out each other’s company to vent, gossip, seek advice, and just plain F-U-N mostly every day as it is. And while we both find ourselves with a slower cash flow that we had 6 months ago, we’re cheaping it up!

I got a text at 3 pm Monday, which was Memorial Day and thus not spending the day at work. She said she was making special sandwiches, to which I hoped meant what it did not.

And so I had to whip something up to compliment a mystery sandwich. I had some tomato and mozzarella salad already made, to which I added arugala, which is my favorite lettuce, and voila! Salad to go with the sandwich. I had bought everything at Trader Joes which has good prices. The bag of lettuce was $2, and this meal was ¼ of the bag (if that), the tomato total was $2, and the mozzarella balls were $3, but again only 1/3 of the container was used in this salad. I added some olive oil, some dry basil, and sea salt.

And now tomorrow she called shotgun on making pasta, so it is up to me to come up with a supplementary food item. It will have to include veggies, and I think all I have is snow peas. Stay tuned…
