Friday was a special day for me since I was working from a satellite location that was 6 blocks from my apartment. (Doesn't "satellite location" sound mysterious? Really, it's not.) Given the nature of Eva's work, she was confined to our normal digs, so we were again dining separately, alas.
However, I had a guest star, Renata, who came home with me for lunch. Perhaps she'll comment and say something nicer than "I hate oregano" or "cucumbers, yuck!"
She'd been lamenting about the lack of hot soup available at any of the lunch options near to our work, in favor of cold, summer-like offerings like gazpacho and cucumber. So I made her some mushroom barley soup, which I started in the morning so it was ready and delicious by lunchtime.
Mushroom Barley Soup for Renata
Onion, garlic, carrots, celery, parsnip, parsley, button and portobello mushrooms from Stiles: $4.50
1/2 quart chicken stock: $1.40
1/3 package of barley: $.67
That's $6.57 for what turned out to be 4 servings, or $1.65 per serving. And it was better than Bottino's. Wasn't it, Renata??
