Another coworker invited me for lunch today, so while it tears me in half to part with Eva for lunch, I am always in support of others flexing their culinary prowess, on top of which, Caleb is a mysterious dude, and part of the deal was that we would be lunching at his apartment. What would you have done?
Caleb informed me that he would be making Pasta Primavera, which I have always understood to contain load of veggies, and be topped with a light cream sauce. In Caleb's own words, he "hates cooked vegetables," so those had been omitted. In their place? Cheese. Now I am a fan of all sorts of cooked vegetables, but as I am also a fan of cheese, this was okay by me. Caleb also made a fresh tomato sauce, so the end result, while not-so-Primavera, was definitely tasty, and Caleb nailed the al dente factor. Admittedly, I was not able to do this myself until about 4 years ago.
The potluck challenge then: what to bring to accompany this that was neither too starchy nor too cheesy, and employed only foods that Caleb will tolerate, a list that is nearly as oppressive as my sister's. Oh, and since I was abandoning Eva, I promised to bring her some of whatever I made, so it also had to accompany her leftover ratatouille.
Oppressive Salad for Caleb ($2.40)
1/2 of one big bunch of green leaf lettuce ($.90)
Homemade ranch dressing ($1.5o)
-1 cup lowfat sour cream, a tablespoon of mayo, 1 clove of minced garlic, salt, pepper, and whatever dried or fresh herbs you've got on hand. I gravitate toward basil, oregano, and thyme, but I had fresh parsley left over from last week's soup, so that got incorporated also.
"Potent" Parmesan-Pepper Cracker Croutons ($1.25)

The only ingredients I'm counting as of significant financial impact are the butter ($1.50) and parmeggiano ($1), and Caleb, Eva, and I only ate half of what I made.

ReplyDeleteI got nothin' but love for the both of you and your finnicky, that is...discriminating tastes. :) And sister, you would have loved the ranch dressing. I'll save seats for both of you on the foodie bus whenever you want to hop on!
