We're geniuses this week, really. Splitting up dinner duties has made for a cost-effective and thoroughly engaging dining experience.
Tuesday - Eva's Lasagne
Wednesday - Pamela's empanadas (see below)
Thursday - Mavi's quiche (brava - she'd never made quiche before and they were terrific.)
Tonight - Caleb's up with Mac and Cheese.
So, I made an empanada sampler - tomato basil mozzarella, mushroom & swiss, and fig/cream cheese. I made 26 of the suckers, figuring this would feed 4 or 5 people. Well I fed 6 and still have 2 servings left. The most expensive components were the empanada wrappers for $4.15 and the fresh mozzarella for $4.67. The total for the project was $17.45. (That's $2.18 for each serving.)
