I love eggs to the extent that, were is not for the whole cholesterol business drummed up in the 80s, I could probably eat them numerous times a day. (I'm still not entirely sure where the jury came in on that. Good? Bad? Who cares since we're now on to other food-borne fears?) So why it never occurred to me before yesterday that scrambled eggs might be a reasonable lunch option is beyond me.
Eva wasn't in today, so I didn't want to make a huge effort for me alone, especially since I have a major coup d'lunch planned for tomorrow. (Those customized bunny jammies are seriously comfortable.) So, eggs it was, scrambled in my favorite way with tomatoes, scallions, and cream cheese.
The verdict? Fine. Not like they are fresh out of the skillet, but not the worst thing I've ever nuked midday either.
Eggs-erroneous, fancy new envirosax bag, and reading material to replace Eva.
