Cheese = Never Having to Say You're Sorry


Yes, I admit, I was too lame (read: old?) to head out to Mavi's birthday festivities over the weekend. In my defense, I really wasn't that into things beginning after 11pm even when I was in my mid-20s. I guess that's not really a defense then; just more evidence that I am incurably lame.

But I digress. Fortunately, I have lunch on my side, and more specifically, cheese. I offered to bring in something special for Mavi sometime this week.

Enter what I like to call "Crackeroni and Cheese." After I let SuperMac have its way with me a few months ago in a previous lunch episode, I may have gone a bit overboard on the cheese front. Probably I put what amounted to nearly 20 oz of parmeggiano, smoked gouda, and extra-sharp cheddar in enough béchamel sauce for what I estimated to be 3 servings. Caramelized onions and marinated artichokes rounded out the crack-tacity. Feeds 8, turns out.
