
As I was walking home Wednesday evening, I had to acknowledge that I didn't feel like cooking. This happens. It's probably why my stuffing didn't taste so stellar - my heart just wasn't in it. But, Eva would be in on Thursday, and it would be the last day in a while, so do we just give up on lunch? Nope! We improvise without cooking. Much, anyway.
I said I'd bring in an antipasto spread if she brought a baguette, and she agreed. So I bought a little hunk of gouda and some great prosciutto for about $10. I had some olives at home, and I turned on my stove only long enough to roast a red pepper. Always wanted to do that, but it was slightly more labor intensive than I'd bargained for. (The peeling process after roasting was kind of messy.)
But we made lunch happen for under $6 a person without a big extravaganza. Hopefully now I'll have energy left over to pull off Thanksgiving dinner!
