
Last week I spent 3 days at the office and the Ladies Lunched.
Tuesday (and Thursday) I had some soup my mother made while visiting me in NYC. It was lentil from the Moosewood Cookbook by Mollie Katzen. My parents have been vegetarians for 27 years, and Mom says Mollie's cookbooks were an integral part of learning to walk the walk.
***I don't know how much it cost because the groceries were on Mom and Dad (Thanks again!) It has provided 7 servings so far, and there are another 4 in my freezer.
The fact that my parents are vegetarians and I eat meat, as you may have noticed, is a topic I have been asked about occasionally.
Growing up, my sisters and I would eat meat at restaurants and at other people's homes, while eating vegetarian with my parents at home. As I got older and difficult, on occasion I would prepare meat to compliment the vegetarian meal my parents were making: I'd brown ground beef to go in spaghetti. They'd also buy us lunch meat, like turkey. I had a mostly vegetarian diet, but ate meat.
I've had a few flirtations with cutting out meat and embracing a fully vegetarian diet, but for now, I've gone back to eating the meat.
But back to Lunch...
I find I don't experiment often with cooking meat. In fact, I am a lot more comfortable with making vegetarian dishes, and experimenting with those dishes.
Take this week of lunches:

Tuesday: Lentil Soup
Wednesday: Stir Fry Veggies (broccoli, mushrooms, onions, garlic, olive oil, spices: yum)
Thursday: Lentil Soup and Apple

We ate well, and saved money. We gossiped while we ate, and we're keeping it going.
Our next set of postings will deal with the trials and tribulations of feeding oneself while on Tour. That's right, Pamela and I will be taking a little trip to Illinois for work. Since we will be unable to cook, we will be reporting on what we find to eat. How we attempt to be frugal, and healthy eating food at restaurants and the occasional eats provided.
