Hanukkah, oh Hanukkah

WTF! I'm finally working at The Lake again, and Pamela get shuffled away all week.
Luckily, Mavi stepped in to help fulfill the "gossip" part of lunch, while Pamela and I still manage to prepare lunch with our intentions of sharing and keeping it low cost. I blogged about Tuesday's lunch without even thinking of how much it was. As we continually meet our goal of saving money, I am not worried about it.

Thursday: Lunch. Pamela's egg drop soup was a nice compliment to the salad I whipped up.
Less than $2 of Arugala, $1 of cherry tomaotes, $1 of mozzarella cheese, olives, and pine nuts. The dressing was Olive oil, Lemon, Balsamic Vinegar with some spices.

Saturday: Operation Latkes.
I decided to invite a few friends over for some latkes. Latkes, aka potato pancakes, are one of the traditional foods of Hanukkah. Why? Oil is the official mascot for Hanukkah. When Target has a display with blue and silver chatchkeys adjacent to the Christmas Department, instead of the generic Jew motif they've got going on, they should be promoting oil! There is an opening for some serious marketing.

But back to reality... The recipe is basic, and I have seen tons of slight variations in recipes. The basics include: Potatoes, onions, egg, flour or matzah meal, and salt mixed together and fried in oil. I'm using canola oil.
